These mushrooms have dark brown umbrella-shaped caps with pure white gills.
They can be eaten raw, in which case you will detect a faint peppery bite, but they are generally cooked. Their slight slippery texture particularly enhances Chinese and oriental dishes. Shiitake can be sautéed, broiled, baked, grilled, stir fried or sliced thin and used raw in salads. Its meaty flavour enhances almost any dish. They have a shelf life of 7-10 days.
